Paradigm Hill L'ami Sage Pinot Noir 2012

For a winery that only produces about 1500 cases this winery puts out some brilliant wines. This wine underwent 7 days cold soak before being allowed to warm up and undergo wild fermentation. The cold soak allows for better retention of colour and flavour. All hands on processes that these utilise.

Paradigm Hill L'ami Sage Pinot Noir 2012

Tight? Yes. Pretty? Yes. Good value? Yes. The wine has a very European feel about it with a drive of acidity pulling everything together. The tannins are light but evident and mouth filling which suggest that they will open out in time. At the moment the flavours are in the dirty darker territory with dark cherries, plums with dried clay and fresh cut herbs rolling around. These flavours are only medium bodied on a spectacularly long palate length. Beautiful.
