Many refer to Merlot as the weed of the Barossa but Tom crafts a wine for his mum every year from her favourite variety. The 2010 version managed to stay varietal and regional at the same time. Best of both worlds I think.

Mmm plumpy! Bright flavours of plum skin, spicy olive tapenade, shaved chocolate and thyme effortlessly flow from the glass. Who thought you could cram so much savoury goodness into one bottle? Nothing is out of place, with the sweet fruit working beautifully with the savoury tannins and the ultra-fine tannins pulling the wine very long in my mouth. Don't think just drink!
